Floor Plan Optimization for Small Cafes — An International Guide

By Hiramise Team

The 10–20 pyeong (33–66 m²) range is the most common startup cafe size. Maximizing seats while maintaining bar efficiency is the key to profitability at this scale. Here's what floor plans from Korea, Japan, and Europe have in common.

Korea — Maximum Seat Density

  • U-shaped bar: covers a single barista's reachable zone efficiently
  • Window seating maximized: diagonal 2-top placement adds 15–20% more seats
  • Counter height mix: 900mm (standing order) + 750mm (seated order) for varied experience

Japan — Counter Seating Culture

  • Extend bar front into customer counter: absorbs solo visitors efficiently
  • Counter seat width: 600–650mm per person with divider panel for privacy
  • Bar height tuned so barista and seated customer make eye contact (service experience)

Europe — Standing Bar + Terrace Extension

  • Standing bar height: 1,100–1,150mm with 400mm footrest
  • Espresso machine exposed at customer eye level — brand experience
  • Mark umbrella and heater positions on the plan when terrace is included

4 Universal Layout Rules

  • Rule 1: Main aisle between bar and seating ≥ 1,200mm (fire egress + comfort)
  • Rule 2: Fill wall seats before center — matches natural customer seating preference
  • Rule 3: Restroom path should not cut through the main seating zone
  • Rule 4: Lock in electrical and plumbing positions before placing equipment — reversing this order raises construction costs
Hiramise AI generates optimized layouts by country and scale when you enter floor area and cafe specialty (coffee, dessert, bakery, brunch). Korean and Japanese regulatory checks are included automatically.
