BBQ Restaurant Hood Airflow & Fire Safety Checklist — All-You-Can-Eat Grill Guide

The most demanding regulation for BBQ restaurants is ventilation. Table-side charcoal or gas grills require twice the airflow of a standard restaurant — kW × 200 m³/h.
How to Calculate Hood Airflow
Total the kW of every table grill to get required airflow. Example using approximately 3.5 kW per table grill:
- 10 tables × 3.5 kW = 35 kW → minimum airflow: 35 × 200 = 7,000 m³/h
- Ceiling individual hoods vs row hoods — consult an HVAC engineer
- Duct cross-section: sized to keep air velocity below 8 m/s
- Noise limit: indoor 65 dB(A) or below recommended
Fire Safety Checklist
- Auto-extinguishing system: suppression nozzles inside hood (mandatory for multi-use facilities)
- Fire extinguisher: at least one ABC unit within 5m of each table
- Sprinklers: mandatory when total area meets multi-use facility thresholds
- Emergency exits: two exit directions required when dining area exceeds 150 m²
Floor Plan Checkpoints
- Show hood location, size, and exhaust direction on the plan
- Main gas shutoff valve: near the kitchen entrance
- Table gas pipe routing: indicate floor-buried or wall-exposed
- Electrical breaker panel location (fire marshal inspection item)
